My muffins do not contain eggs or milk, they are fluffy and moist. Every kid would be delighted with them.
Cupcakes with jam
- 1 1/2 cup flour;
- 3/4 cup sugar;
- 1 tsp baking powder;
- 1/3 tsp baking soda;
- 1/4 tsp salt;
- 1 tsp cinnamon;
- 1/3 tsp ginger;
- 1/2 tsp allspice;
- 1/2 tsp cardamon;
- 1/2 tsp cloves;
- 1 cup water;
- 5 tbsp oil;
- 2 tbsp of alcohol such as vodka, rum, amaretto, … You can replace alcohol with vinegar.
- 1 tbsp molasses;
- q tsp vanilla;
- 6 tbsp jam;
- 2 tbsp unsweetened coconut, optional.
Set the oven to 180 °C/ 350 °F.
Put all the dry ingredients from position 1 to 10 into a bowl. Mix them thoroughly.
Add wet ingredients from position 11 to 15. You can replace molasses with honey, alcohol by vinegar. Using electric mixer or whisk mix everything well.
If the batter is too thick, add some water.
Prepare muffin pan.
Spoon 2-3 tablespoon of the batter into the prepared muffin pan. Add a teaspoon of jam to the center of each cup.
Cover the jam with the rest of the batter. Sprinkle tops of the muffins with coconut.
Bake in the preheated oven for about 20 – 25 minutes.
Serve warm or transfer to a wire rack and let cool completely.
