Rice cookies

These rice cookies do not contains eggs or milk. Your kids will love these cookies.

Rice cookies


  1. 160 g rice cereal;
  2. 3/4 cup sugar;
  3. 5 tbsp grated unsweetened coconut;
  4. 1 tsp baking powder;
  5. 2/3 cup flour;
  6. 1/2 cup margarine;
  7. 1/2 cup rice milk or soy milk;
  8. 1 tsp vanilla extract;
  9. marmalade or jam.


Place the dry ingredients (1 through 5) in a bowl, mix thoroughly. Add margarine and combine it with dry ingredients. Pour half of the soy milk and vanilla extract. Knead the dough adding the rest of the soy milk. If the dough is too dry, add more soy milk or margarine. If you want, you can enrich the dough with some dried fruit such as raisins or dried cranberries.

Set the oven to 180 °C/ 350 °F.

Roll the dough into balls about the size of walnuts and place well apart on the baking sheets. Make a pit in the middle of the each ball with your finger.

Place a little jam in a pit of each ball using two teaspoons.

You can invite your kids to help. Usually, I make the balls, my 2-year old son makes pits and my 4-year daughter places the marmalade.

Bake in the preheated oven for about 10 minutes or until cookies are pale golden color.

  1. These look wonderful. i can eat eggs & milk but have friend that can’t, I’ll have to tell her about your site. I avoid wheat & soy… gotta love our bodies sometimes, they just like to keep us guessing. Great post, yummy pictures!
