Pancakes for dinner? Why not.
My recipe does not contain eggs or cow’s milk.
Yeast pancakes with apples (Racuchy)
- 1 1/2 cup flour;
- 7 g dry quick raising yeast;
- 1/4 cup sugar;
- 1 cup rice milk or soy milk;
- 1 tsp vanilla extract;
- 2 -3 apples, cut into slices;
- oil .
Place dry ingredients (from 1 to 3) into a bowl, mix them well.
Pour soy milk and vanilla extract into the dry ingredients. Using a mixer beat the ingredients to form a batter. The batter should be very thick like a cream. Cover the batter with a cotton cloth and leave in a warm place for 1 hour.
Cut the apples into quarters then slice the quarters.
Put a pan on a medium flame.
The batter is very sticky, so grease a tablespoon with oil, then use it to form the pancakes on the pan.
Put two slices of apple on each pancake and press them down to seal.
Fry the pancakes on each side until golden, then drain them on paper towel.
Sprinkle with powder sugar, serve warm.
