Oatmeal cookies

I love oatmeal cookies. We always take them with us on our weekend trips. The cookies do not contain eggs and dairy products so they are perfect for kids with food allergies. These cookies are easy and quick to make.

Oatmeal cookies

Ingredients:

  1. 5 cups (500 g) quick or old-fashioned oats, uncooked;
  2. 1 1/2 cups (250 g) sugar;
  3. 1/2 cup (125 g) margarine;
  4. 1/2 tsp baking powder;
  5. 4 tbsp apple sauce;
  6. 4 tbsp flour;
  7. 4 tbsp water;
  8. 2 tbsp sunflower seeds;
  9. 2 tbsp raisins;
  10. 1 tbsp pumpkin seeds;
  11. 1 tbsp almonds, chopped.

Makes about 36 big cookies.

Preparation:

Preheat oven at 180 °C (350 °F).

Place all ingredients (from 1 to 11) into a large bowl. I am sure your kids will be eager to help you with this step.


Mix all ingredients well. I think Dad’s big hand will be perfect for this task.

Roll the dough into balls about the size of tangerines and place well part on the baking sheets with parchment paper.

Press the top of each ball with your hand to flatten it. The cookies should be 1 cm to 1.2 cm thick.

Bake the cookies in a preheated oven at 180 °C (350 °F) for 18 – 20 minutes until the bottoms of the cookies are pale golden color.
